In the past week our youngest chickens, hatched in June, have started laying their first eggs. When a young chicken lays her first eggs, they're usually small. The egg on the right we'll sell as "large and up" (weighs more than 2 oz). The egg on the left, from one of those younger hens who's just getting started, is much smaller than the 1.75 oz minimum for a "medium" egg. So we'll eat it ourselves!
